The Lauran Cabaret cooperative is a significant producer in the Minervois, accounting for about 15% of the total production of the Languedoc area, and a fairly diverse selection of wine. They produce young, fruity and full-bodied wine, as well as wines for ageing with different vinification methods (traditional vinification, carbonic maceration, cold wine). The Minervois is one of the larger wine regions in the Languedoc. Covering almost 15,000 hectares of vineyard, about one third of that is solely dedicated to the production of AOC wines (the Minervois was granted AOC status in 1985).
The appellation takes its name from Minerve, a beautiful and ancient village about half an hour away from Domaine de Palatz. Perched over a deep gorge, it takes its name from the goddess Minerva and was therefore of local significance in Roman times; the history of this place however clearly goes back much further, as there are cave paintings in the gorges below which date back more than 30,000 years! Archaeological evidence also shows that viniculture here dates back to at least the early-Roman period and perhaps even celtic Gaul.
According to Snooth, the Minervois region is a good example of the great revolution that took place in the South of France over two decades. Strong improvements in production and vinification have given the Languedoc-Roussillon wines an enormous boost. The moderate table wines from the past have been replaced by artisan wines with terroir expression. Main grape varieties are Syrah, Mourvedre, Grenache, Carignan, Cinsault, Rousanne, Marsanne, Grenache Blanc and Vermentino.
